You can put pretty much any vegetable in a salad so it’s nice to try using vegetables that are in season. It can be quite hard to know which vegetable is ‘in season’ in the UK because so much food is imported. Look at prices! If they’re on offer you can be sure they’re in season!
Now is the perfect time for Avocado! Avocados have loads of health benefits. Read more about why avocados are good for you here .
Try to buy organic as much as you can so you get the full health benefit of the vegetables in your salad without all the pesticides and chemicals that are often used to grow them.
Here is what you could put in your crazy avocado salad:
– Avocado! (See why avocado is good for you here)
– Lettuce
– Tomatoes
– Cucumber
– Raw mushrooms
– Halloumi cheese (you can grill it for a bit first if you want to, I prefer it out of the packet as I find it less rubbery)
– Raddishes
– Grated ginger (see why ginger is good for you here)
– Pumpkin seeds
– Sunflower seeds
– Dried cranberries
And remember, if you spend the extra 5 minutes making it look nice, the salad will taste even more delicious! Apparently, studies have demonstrated that food which is presented well taste better 😉
Add a home made french dressing for extra taste!
For the dressing:
Mix together 1 tsp of wholegrain mustard and 1 tsp of plain mustard,
Mix in one tbsp of balsamic vinegar,
Add 4 tbsp of Olive oil,
Add more oil (if required) bit by bit until the dressing is liquid enough to be poured on the salad.
Bon appetit!!
